I've been thinking about doing this for a while now but I finally organized myself and my kitchen enough that we went for it. The main reason is that Zoe has had eczema since she was born. My mom read somewhere that a gluten intolerance can actually cause eczema. I've been Googling this for a while and it can also cause asthma. Eczema and asthma are my top prioritized worries because both conditions run in Ryan's family and both have caused a lot of discomfort and tedious treatment. Ryan's mom noticed a huge improvement in her eczema when she switched from regular wheat to spelt (the ancient, unaltered form of wheat). At this point I'm thinking that a more drastic measure (than just spelt) will be more beneficial because I can monitor closer if the reaction is gluten or just wheat. If this does clear up Zoe's skin then I'm going to try reintroducing wheat-free but not gluten-free products and see if that makes a difference. I'm hoping by going gluten-free that I will remove the "poison" that Zoe's body is reacting to and even that the rest of us may feel better. However, if this doesn't work then we're going to go even more drastic and try dairy-free. Hopefully it doesn't come to that!

good luck with this! I've read a lot about it too. There are tons of resources out there to help. There's a book, I believe it's called Gluten Free Girl?
